O'Fish is specialized in sourcing and providing fresh or frozen sea products. Based in France, they are located in the harbour of Honfleur.
All the fish fillets are flash frozen immediately after being fished and treated. They are subject to cryogenic temperatures by direct contact with liquid nitrogen (N₂) at -60°C or carbon dioxide (CO₂ ) at -42°C. This process enables the optimum preservation of the fish nutritional values , less water loss during thawing, and a longer shelf life.
