John Dory fish is one of the most refined and delicate fish. It is a saltwater fish, it has a mild, slightly sweet flavor. This fragile fish must be treated with care so it is therefore best to cook it in its skin.
This product has already been gutted (intestines and other internal organs have been removed), you just need to remove the head and the fins. You can cook it in the pan, in the oven, poached, steamed but also grilled on the barbecue after wrapping it in aluminum foil.
