INGREDIENTS:

  • 1.5kg of roasted pork loin
  • 1kg of red cabbage
  • 1kg of white cabbage
  • 300g of cranberries
  • 3 apples
  • 18 prunes
  • 40cl of water
  • 10cl of vinegar
  • 4 tablespoons of sugar
  • 2 pinches of cumin
  • 50g of butter
  • Salt and pepper

 

INSTRUCTIONS:

1. Clean the red cabbage and white cabbage, cut them separately into quarters and then into strips. Swell the prunes in warm water for about 15 minutes. Plan 2 pots and divide the 40cl of water, vinegar, sugar and cumin in them.

2. Cook the red cabbage and white cabbage separately for 1 hour until it is tender. If necessary, add water during cooking.

3. To cook the pork roast, preheat the oven th.8 (240°C). Then put the roast in the oven with a glass of water and 50g of butter. After 15 minutes of cooking, lower the oven to th.6 (180°C). Leave the pork loin to cook for another hour, watering it from time to time.

4. Then peel the apples and cut them into quarters. Cook them in a frying pan with a dash of butter and the cranberries. At the end of cooking the pork roast, cut them into slices and place them in a serving dish. Season with salt and pepper to taste. Present it separately or with the reheated fruits and vegetables.
